Ingredients
- 1/4 c olive oil
- 2 large onions, finely chopped
- 6 slices bacon, finely chopped
- 4 large cloves garlic, finely chopped
- 1-1/4 t paprika
- 1 t thyme, finely chopped
- 3-1/2 c low-sodium chicken broth
- kosher salt
- pepper
Preparation
Step 1
Heat oil in large skillet over medium-high heat. Add onions and cook, stirring occasionally until soft and caramelized, 30 minutes. Add bacon, garlic, paprika and thyme, and cook, stirring, until bacon is browned but not crisp, about 5-7 minutes. Stir in broth and bring to a boil. Reduce heat and simmer until the bacon is tender, about 5 minutes.
Using a blender, puree the gravy in batches until smooth. Return gravy to skillet and keep warm over low heat. Whisk in 1/2 t salt and 3/4 t pepper. Serve.
You can make it ahead of time, cool and cover for up to 3 days. Reheat before use.
