Ingredients
- 1 T cooking oil
- 1/3 C finely chopped onion
- 2 tsp finely grated gingerroot
- 14 oz can crushed pineapple, drained and juice reserved
- 1/2 C sweet chili sauce
- 3 T lime juice
- 2 tsp soy sauce
- 1/4 tsp salt
- 2/3 C reserved pineapple juice
- 2 tsp cornstarch
- 1/4 tsp grated lime zest
- Tasty Meatballs
Preparation
Step 1
Heat cooking oil in medium saucepan on medium. Add onion. Cook for about 2 minutes, stirring often, until starting to soften. Add ginger; heat and stir for another 2 to 3 minutes until onion is softened.
Add next 6 ingredients. Stir; bring to boil.
Stir reserved pineapple juice and cornstarch in small bowl until smooth. Slowly add to crushed pineapple mixture, stirring constantly. Heat and stir for 2 to 3 minutes until boiling and slightly thickened.
Add lime zest; stir; remove from heat.
Put Tasty Meatballs into ungreased 2 quart casserole. Pour pineapple mixture over top/ Stir until coated. Bake, covered in 325 oven for about 30 minutes until meatballs are heated through.
