Mini Apple Stack Cake

Ingredients

  • 5 cookie(s) Pizzelle vanilla flavored Italian style cookies
  • 1 ⁄2 cup(s) unsweetened applesauce
  • 1 ⁄8 cup Carys Syrup, Sugar Free, Artificial Maple Flavor
  • 1 ⁄4 cup(s) water
  • 1 ⁄2 tsp ground cinnamon
  • 1 Tbsp brown sugar

Preparation

Step 1

Add all ingredients except the Pizzelle to a small saucepan and heat on medium until it starts to simmer. Simmer for approximately 15 minutes stirring several times. Remove from heat and let the mixture sit about 10 minutes to cook and continue to thicken. Place one cookie on a plate and spoon on a thin layer of the apple mixture, spreading evenly over cookie. Continue with next 3 cookies and then top with the 5th. Cover loosely with plastic wrap and refrigerate overnight. When ready to serve, remove plastic wrap and cut gently in half with a bread knife.
