Paccheri alla Parmigiana is a classic recipe from the South of Italy, the basis for this recipe are fresh aubergines, tomato passata and parmesan cheese together to give life to a mouth-watering pasta dish. Pacheri are typical from Gragnano Area.

Ingredients

  • 400 g Gragnano Paccheri Pasta
  • 750 g Aubergines (purple ones preferably)
  • 300 g Breadcrumbs
  • 150 g Parmesan cheese
  • 200 g Sliced Caciocavallo cheese or an alternative such as Edam
  • 750 g Tomato passata
  • 1 Onion
  • 1 Clove garlic
  • 2 tbspns Extra virgin olive oil
  • 100 g Black olives in brine (chopped)
  • Some Basil leaves
  • Salt to taste
