Ingredients
- 1 lb shrimp in shells
- 1 tbsp olive oil
- 2 tbsp blackened seasoning
- 8 oz mushrooms
- 1 shallot chopped
- 1 tbsp butter
- 2/3 cup white wine
- 1/2 cup sour cream
- 1 tbsp cornstarch
- 6 oz roasted red sweet peppers, cut into think strips
- 1 tbsp capers
- Fettuccine
Preparation
Step 1
Peel and devein shrimp. Place shells in saucepan with 2 cups water. Bring to boil and reduce heat. Simmer, uncovered, 10 minutes. Strain broth. discard shells
(Can use 1 cup chicken broth)
In small bowl combine shrimp and oil Add blackened seasoning and coat shrimp.
In skillet cook mushrooms and shallot in butter until tender. Remove from skillet.
In skillet cook and stir shrimp over medium heat about 2 minutes or till shrimp turn pink.
Remove from skillet. Add wine to skillet. Boil, uncovered till reduced to 1/4 cup. Stir together sour cream and corn starch, stir in 1 cup shrimp broth. Add to skillet.
Cook ans stir until thickened and bubbly. Cook 1 minute more. Add shrimp, red peppers, mushroom mix and capers. Heat through
Season to taste.
