Ingredients
- JERK MARINADE, blenderize to make a thick paste:
- 3 - 4 lbs pork loin OR
- 6 bone-in chicken breast
- 1 tsp black pepper
- 1 tsp thyme
- 1 tsp cayenne
- 1 tsp allspice
- 1 tsp brown sugar
- 1 tsp salt
- 1/2 tsp nutmeg or cinnamon
- 1/4 C vegetable oil
- 1/4 C orange juice
- 2 T lime juice
- 2 T soy sauce
- 1 small onion, finley chopped
- 4 cloves garlic, finley chopped
- 1 small hot chile, seeded and chopped
Preparation
Step 1
Rub meat with jerk marinade. Place in a sealable bag. Refridgerate 6 hours or overnight.
Bring to room temperature. Grill over indirect heat, basting occasionally until done.
