Jerked Chicken or Pork

Ingredients

  • JERK MARINADE, blenderize to make a thick paste:
  • 3 - 4 lbs pork loin OR
  • 6 bone-in chicken breast
  • 1 tsp black pepper
  • 1 tsp thyme
  • 1 tsp cayenne
  • 1 tsp allspice
  • 1 tsp brown sugar
  • 1 tsp salt
  • 1/2 tsp nutmeg or cinnamon
  • 1/4 C vegetable oil
  • 1/4 C orange juice
  • 2 T lime juice
  • 2 T soy sauce
  • 1 small onion, finley chopped
  • 4 cloves garlic, finley chopped
  • 1 small hot chile, seeded and chopped

Preparation

Step 1

Rub meat with jerk marinade. Place in a sealable bag. Refridgerate 6 hours or overnight.

Bring to room temperature. Grill over indirect heat, basting occasionally until done.
