Squash Casserole

A simple squash casserole recipe

Ingredients

  • 4 yellow neck or zucchini squash into small pieces.
  • 1/2 cup mayonnaise
  • 2 eggs
  • Salt and pepper (to taste)
  • 5 tbs. butter
  • 1/2 sleeve of saltine crackers

Preparation

Step 1

Cook squash until tender. Drain thoroughly

Combine all ingredients but crackers and put into baking dish.


Crush crackers into small pieces. Melt butter and combine with crackers.
Pour on top of squash mixture.

Bake at 400 degrees until brown on top
