Ingredients
- 1 cup graham wafer crumbs
- 1/4 cup melted butter
- 1/2 cup sugar
- 2 egg yolks
- 1/3 cup lemon juice
- 1 tbsp grated lemon rind
- 2 egg whites
- 1/4 cup sugar
- 2 cups whipping cream
Preparation
Step 1
Mix butter and graham wafer crumbs. Press half of mixture into greased 8" square cake pan. In saucepan, combine 1/2 cup sugar, egg yolks, lemon juice and rind. Cook over medium heat, stirring until thickened, cool. Beat egg whites to form stiff but moist peaks; add the 1/4 cup sugar gradually. Beat until stiff and shiny. Fold into cooled custard with the whipped cream. Spoon over crust. Sprinkle with reserved crumbs. Freeze until firm. Cut into squares and serve frozen.
