BLUEBERRY MUFFINS

Ingredients

  • 2 cups flour
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 4 tablespoons sugar
  • 1 cup fresh blueberries (if using frozen add 2 tablespoons flour)
  • 4 teaspoons oil

Preparation

Step 1

Mix flour, baking powder, salt and sugar. Combine egg, milk and oil and pour into flour mixture. Stir enough to moisten. Do Not Beat! Fold in blueberries and fill greased muffin pan 2/3 full.
