Farmer's Chicken Soup

Ingredients

  • 2 Tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 4 cups chicken broth
  • 1 large onion, chopped
  • 2 boneless, skinless chicken breasts, cut into 1 inch cubes
  • 4 carrots, peeled, cut into 1 inch pieces
  • 6 oz broad egg noodles, uncooked

Preparation

Step 1

Heat the oil in a soup pot and saute the onion for 2 minutes on medium high heat. Add the chicken and cook for 2 minutes, turning once. Add the noodles, carrots, salt, pepper and broth and reduce heat to a simmer. Cook for 20 minutes, until chicken is cooked through and noodles are tender.
