French Dijon Chicken Melts

Ingredients

  • 2 Tbsp Dijon Mustard
  • 1/2 cup butter, melted, divided
  • 1/2 cup regular or low fat mayonnaise
  • 2 cups cooked chicken, chopped
  • 2 Tbsp onion, minced
  • 20 Buttery crackers, crushed
  • 1 loaf of French bread, split horizontally, toasted

Preparation

Step 1

Preheat the oven to 400. In a medium bowl, combine the mustard, 3 Tbsp butter, mayonnaise, chicken and onion. Spread the mixture into the bottom of a 9 x 9 inch ovenproof serving dish. Mix together the crackers and remaining butter, sprinkle over top of the dish. Bake, uncovered, for 20-25 minutes or until hot and lightly browned. Spread the mixture over the toasted bread halves and cut into fourths. Serve warm.
