Ingredients
- 2 lbs scallops
- flour
- oil for sauteing
- 1 1/2 stick butter
- 2 bunches green onion, chopped
- 2 lbs mushrooms, sliced
- 2 T minced shallots
- 2 T garlic, minced
- 1 T salt
- 2 t freshly ground white pepper
- 1/2 lemon (juice) more or less
- 2 c dry white wine
Preparation
Step 1
Dust scallops with flour. Heat oil in a large skillet over medium-high heat. Add scallops in batches and cook until lightly browned, wiping pan clean after each batch. set scallops aside. Melt butter in saute pan, add onions and cook until soft. Stir in mushrooms, shallot, garlic and salt/pepper and saute until mushrooms are tender. Add scallops, lemon juice and wine. Simmer 4 minutes, shaking pan occasionally. Serve Hot.
