Champagne and Orange Juice Parfaits

Ingredients

  • 2 C champagne or sparkling white wine
  • 2 C orange jice
  • 1/3 C sugar
  • 2 T liquid honey
  • 2 T unflavoured gelatin
  • 1/4 C cold water
  • 4 oranges
  • 2 C strawberries
  • 8 sprigs mint

Preparation

Step 1

In saucepan, gently warm champagne, orange juice, sugar and honey, stirring. Meanwhile, in small saucepan, sprinkle gelatin over cold water; let stand for 5 minutes. Warm over medium-low heat until just melted; whisk into orange juice mixture. Simmer for 1 minute. Do not allow to boil.

Divide about 1/2 C amoung eight 1-cup martini or widemouth glasses. Refrigerate for about 2 hours or until set. Pour remaining mixture into large bowl; let stand at room temperature for 1 hour. Refridgerate for about 1 hour or until consistency of egg whites.

Meanwhile, cut away rind and pith from ornages; cut between membrane and pulp to release sections. Place in bowl. Reserve 8 strawberreis for garnish; quarter remaining berries and add to oranges. Spoon over gelatin in glasses.

With hand mixer, whip remaining oragne juice mixture until frothy and pale; divide amoung lasses. Refrigerate for about 1 hou or until set or for up to 24 hours. Top each with reserved strawberry and mint sprig.

Note: stubstitue ginger ale for Champagne and omit honey
