Blueberry Bars

Ingredients

  • Glaze:
  • 1 C butter, softened
  • 1 3/4 C sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 3 C flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 21oz can blueberry pie filling
  • 1/8 tsp ground nutmeg
  • 1 1/4 C icing sugar
  • 2 T lemon juice
  • 1 T butter, melted

Preparation

Step 1

In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; add to creamed mixture just until combined.

Spread half of the batter into a greased 15 x 10 x 1 pan. Spread with pie filling; sprinkle with nutmeg. Drop remaining batter by teasponnfuls over the top.

Bake at 350 for 40 - 45 minutes or until golden brown. In a small bowl, combine the glaze ingredients until smooth. Drizzle over warm bars. Cool completely on a wire rack.
