Tomatillo Roll-Up

Ingredients

  • 4 lb. rotisserie chicken, shredded
  • 1/2 small onion, thinly sliced
  • 1 cup tomatillo sauce
  • 2 Roma tomatoes, diced
  • 1/4 cup pine nuts, toasted
  • 1 head broccoli florets steamed
  • 4 tortillas, warmed
  • 2 avacados, one diced and one sliced
  • 1 lime, cut into wedges

Preparation

Step 1

In a medium bowl, combine chicken, onion, tomatillo sauce, tomatoes, and pine nuts.

Add the steamed broccoli and toss. Divide the chicken mixture among tortillas, top with diced avacado, and roll up.

Serve with remaining avacado and lime wedges.
