ZUCCHINI BREAD

For lower calorie version, substitute oil with applesauce and increase flour by 1/2 cup.

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 2 cups grated raw zucchini
  • 3 tsps. Vanilla
  • 3 cups flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1/4 tsp baking powder
  • 3 tsps. Cinnamon
  • 1 cup coarsely chopped walnuts

Preparation

Step 1

Beat eggs until light and fluffy. Add sugar, oil, zucchini and vanilla. Mix lightly but well. Combine dry ingredients and add to egg and zucchini mixture. Stir until well blended. Stir in nuts. Pour into two greased and floured bread pans. Bake. Cool on racks slightly before removing from pans.
