Easy Italian Tomato Sauce

This is a delicious sauce that we make and freeze for use in spaghetti, lasagna and spaghetti casserole. I usually make 2 batches at a time so we can freeze some.

Ingredients

  • 2 14 oz can diced tomatoes
  • 1 red bell pepper, or half
  • 1/2 c loosely packed fresh basil, 2 tsp. dried
  • 2 long stems oregano, 1 tsp. dried
  • 2 Tbsp olive oil
  • 2-4 cloves crushed garlic
  • 1/4 tsp black pepper, to taste
  • dash cayenne
  • 1 tsp salt
  • 6 oz can tomato paste, or 1 c sun dried tomatoes
  • 1 tsp onion powder
  • 2 Tbsp dates
  • 1 Tbsp soy sauce
  • 1 Tbsp red wine vinegar
  • 2 Tbsp pine nuts (optional)

Preparation

Step 1

Puree all ingredients in a blender for about 1 minute. To make pasta immediately, add 1 pound of cooked ground beef or sausage and heat through. We freeze in gladware.

Try with buckwheat or rice pasta, which is more nutritious and easier to digest.
