Mushroom Soup

Ingredients

  • 2 oz porcini mushrooms
  • 4 T margarine
  • 2 medium onions
  • 3 cloves garlic
  • 1 lb mushrooms, sliced
  • 1/3 c flour
  • 5 c chicken stock
  • 1 c reserved porcini liquid
  • 1 c non dairy creamer

Preparation

Step 1

Porcini in bowl with warm water and soak for 30 min. Take porcini into other bowl. Strain water.

Melt margarine and sauté onions and stir in garlic. Add fresh mushrooms.

Cook 3 minutes- stir in flour. Cook two minutes and add stock and reserved liquid- mushing to prevent lumps.

Return to heat and simmer 10 minutes.

Add mushrooms, non dairy cream and salt/pepper.
