Ingredients
- 1 lb. Bread flour
- 9 3/4 oz. Water
- 1/2 tbs. Salt
- 1/4 tsp. Instant dry yeast

Step 1
Mix ingredients with dough blender by hand, then turn out on island and mix thourghly. Fold & scooch on lightly floured surface until brought together. Will be a "shaggy mess." Place in metal bowl,cover with plastic wrap, let stand for 12 to 16 hours at 70 drgrees. When ripe, the pre-frement will be domed and beginning to recede in the center. This needs to be done the night before bread baking.
This is used for Rustic Bread!
