Chicken Potato Patties

Ingredients

  • 2 c potatoes, peeled and cut into chunks
  • 1 onion, chopped
  • 1 T oil
  • 2 c cooked chicken (without skin)
  • 2 eggs
  • Salt, pepper, to taste
  • 1/2-3/4 c wheat germ
  • 1/3 c wheat bran
  • Oil for frying

Preparation

Step 1

Place potatoes in medium sized pot, add a pinch of salt and water to cover, plus an extra inch, and bring to a boil.

Simmer for 25 min, until tender. Drain and mash. Heat a frying pan with 1 T oil, and sautee onion on medium flame until soft and golden.

Using a hand blender or metal blade of the food processor, blend chicken just until no large pieces remain.

You can use leftover chicken from soup and/or from plain roasted/baked chicken. Add the rest of the ingredients and mix until combined. Mixture should be thick and be able to hold its shape.

Heat enough oil in frying pan to cover the bottom of the pan and add the batter by rounded tablespoon. Fry on medium flame until golden. Flip and repeat for the second side. Drain on paper towels and serve immediately.
