Creamy Mushroom Alfredo

Ingredients

  • 3 c (8oz) rigatoni, uncooked
  • 2 T butter or margarine
  • 4 c (12oz) sliced fresh mushrooms
  • 1 clove garlic
  • 1 pkg cream cheese, cut into small cubes
  • 2/3 c milk
  • Salt to taste
  • 4 T grated parmesan cheese, divided
  • 2 T fresh parsley, chopped
  • Pepper

Preparation

Step 1

Cook pasta according to package instruction. Drain.

Meanwhile, in large skillet over medium-high heat, melt butter. Add mushrooms and garlic. Cook 5 minutes or until mushrooms are tender, stirring occasionally. Reduce heat to medium.

Add cream cheese, milk and salt, stirring until cheese melts and sauce is smooth.

Toss hot pasta, sauce, 2 T Parmesan cheese and parsley. Season with pepper. Sprinkle remaining Parmesan cheese.
