Strawberry-Rhubarb Crisp

Ingredients

  • 4 c rhubarb
  • 4 c strawberries
  • 1 1/4 c sugar
  • 1 1/2 tsp orange zest
  • 1 T cornstarch
  • 1/2 c fresh orange juice
  • 1 c flour
  • 1/2 c light brown sugar
  • 1/2 tsp salt
  • 1 c oatmeal
  • 12 T unsalted butter (cold and diced)

Preparation

Step 1

Toss fruit, 3/4 c sugar and orange zest in bowl. In measuring cup, dissolve cornstarch and orange juice...add to fruit. Place in baking dish.

Topping:
In mixing bowl, mix with electric mixer: flour, brown sugar, salt, oatmeal...on LOW mix. Add butter and mix all dry ingredients until dry and crumbly. Sprinkle over fruit, cover and bake at 350 degrees for 1 hour.
