BLUEBERRY DELIGHT

A cheesecake type of dessert that can be made ahead... Got this recipe from Chris Marks

Ingredients

• CRUST
• 1/2 cup butter
• 2 cups graham crumbs
• 2 tbsp sugar
• CENTRE
• 2 pkgs cream cheese
• 1 cup sugar
• 4 eggs
• 1 tsp vanilla
• BLUEBERRY FILLING
• 4 cups fresh or frozen blueberries
• 2 1/2 Tbsp cornstarch
• 3/4 cup sugar
• 1/2 tsp lemon juice
• pinch salt

Preparation

Step 1

CRUST

Mix ingredients and press into a 13" x 9" pan

CENTRE

Mix all ingredients. Pour over crust. Bake at 350 degrees for 15-20 minutes

FILLING

Cook till thick

Pour filling over cooked centre. Cool. Top with cool whip or whipping cream. Cool whip actually works best!!
