Zucchini Cakes

Ingredients

  • 2 1/2 Cups Zucchini, grated
  • 1 Egg, beaten
  • 1 Tbs. Butter, melted
  • 2 Cups Bread Crumbs
  • 1 1/2 tsp. Old Bay Seasoning
  • 1 tsp. Prepared Mustard
  • 1 Tbs. Minced Onion
  • 1 tsp. Dried Parsley
  • Cooking Oil

Preparation

Step 1

Combine zucchini, egg, and melted butter. Add 1 cup bread crumbs, seasoning, mustard, onion, and parsley and mix well. Form into cakes and roll into remaining bread crumbs. Chill for 24 hours. Fry in cooking oil until browned on both sides.
