RED EYE GRAVY

Ingredients

  • 1 T oil
  • 1/2 c fatty ham scraps
  • 4 slices of ham
  • 1 tsp. all purpose flour
  • 1/8 tsp. cayenne
  • 2/3 c coffee
  • salt and pepper to taste

Preparation

Step 1

. cook ham scraps and save the rendered fat

. brown ham in the fat

. reduce heat and stir in flour and cook for a couple of minutes

. whisk in coffee, bring heat to medium and cook until thickened, return ham to pan and warm and coat with the gravy
