Lisa Stanlake Spinach Salad

Ingredients

  • 1 bunch spinach
  • 5-6 slices prosciutto
  • 1 1/2 tb oil
  • 2 tb orange juice
  • 2 tb cider vinegar
  • 2 tb currant jelly
  • 1/2 cup almonds, sliced and toasted

Preparation

Step 1

1) Crisp the prosciutto and reserve.
2) Add liquid ingredients to pan and boil.
3) Pour over spinach and add prosciutto and almonds.
