Ingredients
- 500 g Zucchini.
- 3 Scallions,finely chopped.
- 1/2 cup fresh parsley ,chopped
- 2 eggs.
- 1/4 cup white flour.
- 1/4 cup whole wheat flour.
- Salt and ground pepper.
- 1/2 Tablespoon olive oil ,for shallow-frying.
- low fat sour cream,for serving (optional).
Preparation
Step 1
1)Coarsely grate Zucchini .
2)Transfer to a large bowl ,stir in Scallions,parsley,eggs,flour,Salt and pepper
3)Heat oil in frying pan , shallow- fry 1/3 cup of mixture until golden brown both sides and cooked through(4 to 5 minutes per side).
Flatten slightly during cooking.
4)Serve immediately with sour cream.
