Whole Wheat Blueberry Banana Muffins

Ingredients

  • 1 1/2 C whole wheat pastry* flour
  • 1 1/2 t baking powder
  • 1/2 t table salt
  • 1/4 t baking soda
  • 2 t ground cinnamon
  • 1 egg, beaten
  • 1/2 C packed brown sugar
  • 1/2 C vanilla greek yogurt
  • 3 T olive oil
  • 2 mashed ripe bananas
  • 1 t vanilla extract
  • 1/2 C frozen blueberries tossed in a few pinches of flour
  • * pastry flour yields lighter results

Preparation

Step 1

Preheat oven to 400° and grease a 12-cup muffin pan. Combine flour, baking powder, salt, baking soda and cinnamon in a large bowl.

Mix beaten egg, brown sugar, greek yogurt, oil, banana and vanilla in a separate bowl until well combined. Add to flour mixture, stirring until just combined. Lightly fold in blueberries and divide batter among muffin cups.

Bake for 15-20 minutes or until browned and toothpick comes out clean. Cool in pan for 5 minutes. Remove from pan and cool on wire rack. Serve warm or at room temperature.
