Ingredients
- Lemon Glaze:
- 2 cups self raising flour
- 2 tsp grated lemon rind
- 1/3 cup caster sugar
- 1 egg, lightly beaten
- 60 g butter, melted
- 1 cup buttermilk
- 200 g frozen raspberries
- 1 T lemon juice
- 1 tsp gelatin
- 1 1/2 T caster sugar
Preparation
Step 1
Grease 6, 3/4 cup, muffin pan.
Sift flour into large bowl, stir in rind and sugar, then egg, butter and buttermilk, then raspberries. Spoon mixture into prepared pan. Bake in moderatley hot oven about 25 minutes. Brush with hot glaze while muffins are hot.
Lemon Glaze:
combine all ingredients in small pan, stir over heat, without boiling, until gelatin is dissolved.
