Ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 3/4 cup flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp cinnamon
- Filling
- 8 oz cream cheese softened
- 1 cup powered sugar
- 2 tbsp margarine
- 1 tsp vanilla
Preparation
Step 1
Beat the eggs, add the sugar gradually. Beat in 2/3 cup pumpkin. Add flour, salt, baking soda and cinnamon.
Grease jelly pan and line with wax paper. Grease the wax paper. Spread the batter evenly in the pan.
Bake in 375 oven 13 -15 minutes.
Turn out up side down on a cloth dusted with confectioners sugar, roll up in cloth. Pull the wax paper off carefully. Trim off edges and roll up in cloth. Cool and fill with filling..
