Zucchini Cupcakes

Ingredients

  • Batter:
  • 3 eggs
  • 1 1/2 c sugar
  • 1/2 c oil
  • 1/2 c orange juice
  • 1 tsp almond extract
  • 2 1/2 c flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp cloves
  • 1 1/2 c zucchini
  • Caramel Frosting:
  • 1 c brown sugar
  • 1/2 c butter
  • 1/4 c milk
  • 1 tsp vanilla
  • 1 1/2-2 c powdered sugar

Preparation

Step 1

Cream eggs, sugar, oil, juice and extract. Combine dry ingredients together. Add dry ingredients to egg mixture. Combine well. Add zucchini and mix well. Fill a greased or paper lined muffin pan 3/4 full with batter.

Caramel Frosting:
Place brown sugar, butter, milk in sauce pan. Bring to a boil. Cook and stir for 2 minutes. Stir in vanilla, cool to lukewarm. Beat in powder sugar until spreadable consistency.

Bake 350' for 20-25 minutes
