Ingredients
- 1 handful pecan pieces
- 1 Cup ionstant mashed potato flakes
- 1 1/3 lb ground turkey breast
- 1 small white onion
- 1 handful chopped fresh flat-leaf parsley
- 2 sprigs fresh thyme, stripped and chopped leaves
- 1 tsp poultry seasoning
- salt and freshly ground black pepper, to taste
- 2 T extra-virgin olive oil
- 1 can whole berry cranberry sauce
Preparation
Step 1
Grind pecans. Mix with potato flakes in a shallow dish. Place turkey in bowl and grate the onion over and into same bowl. Combine with parsley, thume, poultry seasoning, salt and pepper. Form into 6 patties.
Heat oil in a non-stick skillet over medium-high heat. Coat patties in potatoe and nut mixture. Cook 5 minutes each side.
Serve with plenty of cranberry sauce, a green salad and bread and butter
