Chocolate Crinkle Cookies

Use this recipe. I turns out perfect every time. Not flat and crispy and not too puffy but perfectly crinkled with chewy edges and soft centers.

Ingredients
- Dry Ingredients:
- 1 cup flour
- 1/2 cup dutch processed cocoa
- 1/2 t. salt
- 1 t baking powder
- 1/4 t baking soda
- whisk together
- In another bowl, melt together:
- 4 oz unsweetened chocolate
- 4 T unsalted butter
- Wet Ingredients:
- 1 1/2 cup light brown sugar
- 3 eggs
- 4 t espresso powder (opt)
- 1 t vanilla extract
- Add melted chocolate to wet ingredients
- Fold in dry ingredients.
- Let sit on counter for 10 minutes.
- Roll in balls (about 2 T. or #30 scoop). Roll in granulated sugar. Roll in powdered sugar.
- Bake at 325° for 12 minutes. Rotate pan 1/2 way thru baking.
