Use this recipe. I turns out perfect every time. Not flat and crispy and not too puffy but perfectly crinkled with chewy edges and soft centers.

Ingredients

  • Dry Ingredients:
  • 1 cup flour
  • 1/2 cup dutch processed cocoa
  • 1/2 t. salt
  • 1 t baking powder
  • 1/4 t baking soda
  • whisk together
  • In another bowl, melt together:
  • 4 oz unsweetened chocolate
  • 4 T unsalted butter
  • Wet Ingredients:
  • 1 1/2 cup light brown sugar
  • 3 eggs
  • 4 t espresso powder (opt)
  • 1 t vanilla extract
  • Add melted chocolate to wet ingredients
  • Fold in dry ingredients.
  • Let sit on counter for 10 minutes.
  • Roll in balls (about 2 T. or #30 scoop). Roll in granulated sugar. Roll in powdered sugar.
  • Bake at 325° for 12 minutes. Rotate pan 1/2 way thru baking.
