Mango Salad - Gluten Free

Ingredients

  • Salad:
  • 1 mango, chopped
  • 2 tbsp dry shredded unsweetened coconut
  • 1/4 cup cilantro
  • 3 green onions
  • 2 tbsp cashews, chopped
  • 1 tbsp fresh basil
  • Dressing:
  • 2 tbsp tamari (or soy sauce)
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 tsp thai chili sauce

Preparation

Step 1

1. Toast coconut in pan and leave to cool.

2. Combine chopped mango, half the coconut, cilantro, onions and basil.

3. Combine dressing ingredients and toss with salad.

4. Sprinkle cashews and remaining coconut on top.
