Ingredients
- 1/2 cup shortening (I use butter flavor shortening)
- 1/2 tsp. salt
- 3/4 cup white sugar
- 2 eggs
- 3 bananas mashed (I use my blender to mash them)
- 2 cups flour
- 1 tsp. baking soda
- 1/2 cup walnuts, chopped (optional)
Preparation
Step 1
Combine shortening, salt and sugar and cream together. Add eggs and continue mixing. Add bananas and continuing mixing. Whisk together the flour, baking soda and nuts and add to the banana mixture. Mix all together well. Spray bread pans with Pam or any other non-stick cooking spray. I like to use the Pam with the flour in it. Pour dough evenly into each pan. I usually double this recipe so that I get 3 full loaves out of it. Used as a single recipe you can get 2 loaves that are smaller or one large loaf. Bake at 350 degrees for about 35 minutes. The top of the bread will be very brown. Make sure that the middle of each loaf is cooked all the way through. You can test this by using a toothpick.
