Ingredients
- 6 large tomatoes, wedged
- 1/2 cup diced green onions
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup minced fresh parsley
- 2 garlic cloves, minced or crushed
- 1 tsp. salt
- 1 Tbsp. thyme
- 1/4 tsp. pepper
Preparation
Step 1
Combine all ingredients and pour over tomatoes in a large bowl. Marinate in refrigerator for 2 hours or longer stirring occasionally to coat.
