Dancing Bears Onion Soup

Ingredients

  • 6 medium onions, sliced
  • 2 Tbsps. chopped garlic
  • 4 ounces butter
  • 1 Tbsp. thyme
  • 1 Tbsp. kosher salt
  • 1 tsp. white pepper
  • 1 cup V8 juice
  • 1/2 cup dry sherry wine
  • 2 cups chicken broth
  • 2 cups beef broth

Preparation

Step 1

In a large saucepan, saute onions and garlic in butter until caramelized. Add sherry and reduce for 2-3 minutes. Add V8 juice and broths. Bring to a boil and reduce to a simmer for 20-25 minutes. Season with kosher salt, white pepper and thyme. Serve with crusty french bread.
