Haystacks

This is a fun recipe. You can change it up based on the ingredients you like or have on hand. You can serve as is or serve over your favorite rice.

Ingredients

  • Mexican version:
  • 1 can kidney beans, drained
  • 1 t salt
  • 2 T chili powder
  • 1 t ground black pepper
  • 1 (14.5 oz) package corn tortilla chips
  • 1 head iceberg lettuce - rinsed, dried, and shredded
  • 2 large tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 (10 ounce) can chopped black olives
  • 1 carrot, shredded
  • 1 cup shredded Cheddar cheese
  • 1/2 cup sour cream
  • 1 c salsa
  • Sweet Version:
  • 1 red, yellow, or orange bell pepper, chopped
  • 1 red onion, chopped
  • 1 can pineapple chuncks, or manderine oranges
  • 1 carrot, shredded
  • 2 celery stalks, sliced
  • 1 cup shredded Cheddar cheese
  • 1/4 c coconut flakes
  • 1 pkg chow mein noodles
  • 1 can cream of chicken soup mixed with 3/4 c milk, heated

Preparation

Step 1

Mexican version:
If you are serving with tortilla chips, in a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.
To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese.

Sweet Version:
To assemble the haystacks put a hand full of chow mein noodles on a plate. Top with cream of chicken soup and all remaining ingredients.
