Ingredients
- 1 1/2 lbs. baby new potatoes scrubbed and quartered
- 2 T. evoo
- 1 /t tsp. salt and pepper
- 1 1/2 tsp. chopped fresh parsley
- 1 tsp. chopped fresh rosemary
- 1 tsp chopped fresh oregano
- 1 tsp minced fresh chives
- Preheat oven to 425 degrees.
Preparation
Step 1
Place potatoes in bowl. Drizzle with olive oil. Add salt, pepper and herbs and toss.
Put potatoes on baking sheet. Make sure none are touching.
Roast in oven for 20 minutes. Turn with spatula so all sides get crisp--20 minutes more.
