Slow Cooker Chicken Cacciatore for Two

Ingredients

  • 5 bone-in, skinless chicken thighs
  • 1/2 tsp. dried oregano leaves
  • 1/2 tsp. dried basil leaves
  • 1/2 tsp. salt
  • 1/8 tsp. freshly ground black pepper
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 1 cup sliced cremini mushrooms
  • 3 garlic cloves, minced
  • 3 Tbls. tomato paste
  • 1 (14 oz.) can diced tomatoes, undrained
  • 1 (8 oz.) can tomato sauce

Preparation

Step 1

1. On a platter, sprinkle the chicken with the oregano, basil, salt and pepper; set aside.

2. In the slow cooker, combine the onion, bell pepper, mushrooms and garlic. Top with the chicken.

3. In a small bowl, mix the tomato paste, tomatoes and tomato sauce. Pour the mixture into the slow cooker.

4. Cover and cook on low for 8 hours, or until the chicken registers 160 degrees F on a meat thermometer, and serve.
