Sweet Potato Casserole 1

Ingredients

• 5 medium sweet potatoes peeled and cubed
• 2 cups sugar
• 2 tablespoons vanilla extract
• 2 tablespoons butter
• large marshmallows

Preparation

Step 1

Peel and cut sweet potatoes into 1 to 2 inch pieces. In large pot, cover sweet potatoes with water, add sugar, vanilla, and butter, and boil potatoes until tender. Remove potatoes when soft. Continue to boil water until syrup forms. Place potatoes and syrup in baking pan. Place large marshmallows on their side on top of potatoes. Put in oven at 350 F until marshmallows are golden brown.
