Potato Salad

Ingredients

  • 6 medium potatoes peeled and cubed
  • 12 large eggs
  • mayonnaise
  • salt and pepper to taste

Step 1

Cut potatoes into bite size cubes. Boil potatoes and eggs in same pot for 20 minutes or until potatoes are fork tender. Peel eggs and remove yolk from egg. Dice egg whites. Separately, crush all egg yolks in a bowl. Add mayonnaise, salt, and pepper to the crushed egg yolks and mix well. The amount of mayonnaise used here should be enough to cover all of the potatoes. In a large bowl, mix together potatoes, egg whites, and mayonnaise-egg yolk mixture. Refrigerate.
