Mexican Cornbread

Ingredients

  • 1 pound ground beef
  • 1 cup cornmeal
  • 1 can creamed corn
  • 1/2 teaspoon salt
  • 1 jalapeno chopped
  • 1 medium onion chopped
  • 1 teaspoon soda
  • 1/2 cup oleo melted
  • 1 cup milk
  • 2 cups grated cheese
  • 2 eggs

Preparation

Step 1

Brown meat, onions, and pepper, drain grease. Mix salt, cornmeal, soda, and milk. Add eggs, corn, and margarine. Mix well. Pour 1/2 batter in a greased casserole dish and add meat and cheese and top with remaining batter. Bake uncovered at 375 F for 45 minutes.
