Chicken Frajitas

First made 10/12/2015 this is an excellent marinade for frajitas!
I usually use extra chicken, so double or triple marinade recipe.

Ingredients

  • Marinade:
  • 2 T. white wine vinegar
  • 2 T. fresh lime juice
  • 1 T. vegetable oil
  • 1 T. Worcestershire sauce
  • 1 T. chopped onion
  • 1 clove garlic, minced
  • 1/2 tsp. salt, optional
  • 1/2 tsp. dried oregano
  • 1/4 tsp.ground cumin
  • 1 pound boneless chicken breasts, sliced into pieces
  • Green and red peppers sliced thin
  • Medium onion, sliced thin
  • 6 flour tortillas (8 inches)
  • salsa, guacamole,sour cream and shredded cheddar cheese for tortilla fillings

Preparation

Step 1

In a large resealable plastic bag, combine lime juice,oil, Worcestershire sauce, onion, garlic, salt if desired, oregano and cumin. Add chicken and marinade for at least 4 hours.

Drain chicken and discard marinade. In a large saute pan coated with some olive oil saute chicken for about 2 minutes,add peppers and onions. Saute until vegetable are crisp tender.

Spoon chicken and vegetables down the center of tortillas. Garnish as desired with salsa, guacamole,cheese or sour cream
