Lemon Cookies

Ingredients

  • 1/2 C softened butter
  • 3/4 C sugar
  • 1 beaten egg
  • 1 T lemon zest
  • 2 t lemon juice
  • 1 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt
  • 1 2/3 C flour
  • 1/2 C whole milk
  • Topping
  • 1/4 C lemon juice
  • 3/4 C sugar
  • Can be sprinkled w/powdered sugar

Preparation

Step 1

Beat butter and sugar together. Add egg, zest and lemon juice. Mix well. Mix in baking powder and soda and salt.

Mix in half flour and half milk. Stir well and add the rest of the flour and milk.

Drop by teaspoons on to ungreased cookie sheet. Make these small--about the size of a cherry.

Bake 12- 14 minutes at 350 degrees. Use parchment paper. While the first batch is baking, make topping. Heat lemon juice in microwave just a bit. Add sugar. Stir. Brush topping on hot cookies.
