Russian Beef Stroganoff

Ingredients

  • 1 TBSP flour
  • 1/2 tsp salt
  • 1 LB beef sirloin, cut into 1/4" strips
  • 2 TBSP butter
  • 1 cup thinly sliced mushrooms
  • 1/2 chopped onion
  • 1 clove garlic, minced
  • 2 TBSP butter
  • 3 TBSP flour
  • 1 TBSP tomato paste
  • 1 1/4 cup beef stock or 1 can condensed beef broth
  • 1 cup sour cream
  • 2 TBSP cooking sherry

Preparation

Step 1

Combine 1 TBSP flour & salt, dredge meat in mixture. Melt butter in skillet, then brown sirloin strips. Brown quickly on all sides.
Add mushrooms, onions and garlic, cook 3-4 minutes until onion is barely tender. Remove meat and mushrooms to plate.
Add 2 TBSP butter to pan drippings, when melted blend in 3 TBSP flour.
Add tomato paste.
Now slowly pour in cold meat stock.
Cook and stir until thickened.
Return browned meat and mushrooms to pan, Stir in sour cream and sherry. Heat briefly.

Makes 4 servings.
Serve over rice or egg noodles.
