Chocolate Coconut Pie

Ingredients

  • 1/2 cup semisweet chocolate chips
  • 1 can (14oz) full fat coconut milk, well chilled
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • salt
  • 1 frozen premade pie crust, baked according to directions and cooled
  • whipped cream

Preparation

Step 1

stick the bowl and beaters of an electric mixer in the freezer for 15 mins. this helps keep your mix from turning into a puddle while you whip it.

melt the chocolate chips in a double boiler or the microwave.

grab the coconut milk from the fridge (don't shake it) open the can, scoop out the thick white cream on top, and put it in a chilled bowl. you should have about 1 cup. (leave the clearish liquid in the can and use for something later)

sift the powdered sugar into the coconut cream so there aren't any chunks. add the vanilla. now beat on medium high. slowly stream the melted chocolate and the salt. keep those beaters going until it starts looking all fluffy and delicious, about 2mins. spread it in an even layer in the piecrust.

smooth whipped cream over the top. let it chill for at least an hour before serving.
