Potato Pancakes

Ingredients

  • 4 large or 6 med raw potatoes, grated
  • 2 eggs well beaten
  • 1 t salt
  • 1/2 t baking powder
  • 1/4 c flour
  • 1/8 t pepper
  • 1 small onion, grated

Preparation

Step 1

Peel potatoes and grate into a bowl of ice water. Drain liquid. Add beaten eggs; mix with rest of the ingredients. Drop by spoonfuls on hot oiled pan. Brown on both sides. D rain on paper towels and serve with apple sauce or both
