Ingredients
- 2 c cottage cheese
- 1/2 c melted unsalted butter
- 1 t salt
- 3/4 t black pepper
- 6 med baking potatoes and peel if desired
- 2 large eggs
- 1 c evaporated whole milk
Preparation
Step 1
Preheat oven to 375 and butter a 9x13 pan.
Blend cottage cheese in a food processer or blender until smooth. Add butter, salt, and pepper and blend again. Cut potatoes into very thin slices. Spread one third of potatoes evenly in one layer in the dish and top with one third of the cottage cheese. Continue to layer top ending with cottage cheese. Cover with foil and bake until potatoes are tender 60-70 min.
Combine eggs and milk in a bowl. Pour evenly over potatoes and bake, uncovered until custard is set, about 20 minutes.
